The amount of creativity that floats around in a baking and pastry kitchen always amazes me. For the final project in Chocolate and Sugar Showpieces lab was to make a sugar showpiece of your choice. Everyone had a different theme that not only was beautiful but also showed a little about themselves.

For my showpiece I decided to make an beach scene with coral and a crab. I wanted to try my hand at blowing sugar so I decided to make the crab using that technique. I definitely underestimated just how difficult it would be to make a crab. I only broke 6 crab bodies before getting to the final one.

The rest of the showpiece went relatively easily. I made a large wave as the backdrop and used ice to make coral. Once I put everything together it looked great!

I am content with my work, although I know that next time I can do a better job. I enjoy working with sugar but it is frustrating because of how delicate it is. I think I will stick to working with cake and chocolate!
