Speaking as someone who in the throws of my 'mid-life' crisis has returned not only to work in the kitchen but also embarked on an academic culinary education, I feel your pain. In this my first term in what I hope will end up being an associates degree eventually, while coming out of the box hard and fast, I hit critical mass at the close of the term pretty burnt out. And I was only taking 9 hours, can't wait till summer and I try 18. Focus but also allow yourself some 'head' time I like to call it,even if it's just to play some solitare or meditate, daydream whatever. I play banjo personally, I find that I can get back into my 'kitchen' mindset and be more effective, rather it's the academic kitchen or the actual resturaunt.

Best of luck.
