Grilled Or Roasted Salmon With Seafood Sauce
Ingredients:

2 pounds of fresh salmon figuring 1/2 pound per person
4 Tbs. Butter
1 cup cream (you can substitute Half & Half to make it a little lighter, yeah right)
3 cups of lobster (shellfish) STOCK reduced to a glaze.
2 Tbs. Fresh Dill, chopped
1 Tbs. Fresh Lemon Juice
1/4 cup Parmesan Cheese

Preparation
Preparation:

Bake or grill the salmon according to your preferences

To make the sauce:

In a saucepan over medium high heat, melt the butter but be careful not to let it burn. Add the cream and shellfish reduction (glace) and whisk until blended.

Simmer the sauce, whisking until slightly reduced by about 1/4. Add the dill, lemon juice and Parmesan cheese an whisk until thoroughly blended.

Remove from heat and serve over plated salmon.
