Twice Baked

INGREDIENTS:

2 large, raw russet potatoes
1 onion, diced medium and sautéed
1/4 cup whole milk
1 tablespoon butter
1/2-cup cheddar cheese, grated
Salt, pepper, and nutmeg


Preparation

Bake large russet potatoes at 350° until cooked. Remove from the oven and cool. Cut the potatoes lengthways; and scoop out the potato out of the skin, place it into a bowl. Make a mashed potato mixture from the flesh; then add to it the sautéed chopped onions and grated cheddar cheese. Scoop the potato mixture into the potato skins, and bake in 350° oven until the top is browned, (about 30 minutes) and serve. This recipe serves 4 portions of potatoes.
