This is a very simple, clean flavored soup garnished with bright green oil to impart a burst of bright flavor and color.

Ingredients:
- 2 cans white cannellini beans (about 2 1/2-3 cups) drained and rinsed with water
- 1 small onion, diced small
- 1 clove garlic, chopped
- 1 cup chicken stock
- 3 cups water
- Salt & pepper to taste
- 1/4 cup Italian parsley leaves
- 1/2 cup canola oil
- Pinch of salt
Preparation
- Place beans, onion, garlic, stock, and water in small pot.
- Bring to a simmer and cook for about 30 minutes or until onions are soft.
- Put mixture through food mill or blend in blender and strain through large meshed strainer.
- Season with salt and pepper to taste.
- For parsley oil, combine parsley, oil, and salt in blender and blend until smooth.
- Strain through very fine meshed strainer and drizzle over each serving of soup.
