Quick White Bean Soup With Parsley Oil
This is a very simple, clean flavored soup garnished with bright green oil to impart a burst of bright flavor and color.
(Yield: 4 servings)

Ingredients:
  • 2 cans white cannellini beans (about 2 1/2-3 cups) drained and rinsed with water
  • 1 small onion, diced small
  • 1 clove garlic, chopped
  • 1 cup chicken stock
  • 3 cups water
  • Salt & pepper to taste
  • 1/4 cup Italian parsley leaves
  • 1/2 cup canola oil
  • Pinch of salt

Preparation
  1. Place beans, onion, garlic, stock, and water in small pot.
  2. Bring to a simmer and cook for about 30 minutes or until onions are soft.
  3. Put mixture through food mill or blend in blender and strain through large meshed strainer.
  4. Season with salt and pepper to taste.
  5. For parsley oil, combine parsley, oil, and salt in blender and blend until smooth.
  6. Strain through very fine meshed strainer and drizzle over each serving of soup.
