While studies are finding that the number of patients with celiac disease have quadrupled in the past 50 years, celebrities, like Kim Kardashian, say they use gluten-free diets for weight loss. With the demand for gluten-free food growing quickly, and the price for gluten-free products reliably higher than that of their with-gluten counterparts, it’s no surprise that gluten-free food sales are expected to reach $5 billion a year by 2015. But the sudden rise in demand for gluten-free food makes you wonder: how much of the gluten-free boom is based on medical musts, and how much is fueled by food trends.
