			<content:encoded><![CDATA[<p>A few months ago, the Washington Post published an article about the<a href="http://www.washingtonpost.com/wp-dyn/content/article/2008/05/16/AR2008051601921.html"> increasing number of college graduates moving back in with their parents</a> for a variety of reasons.  Many are saddled with high student loan balances while others have been confronted with a dwindling number of well-paying entry level jobs for the newly college educated.  According to the Studnet Monitor spring 2008 recruitment study, 73 percent of today&#8217;s graduating seniors will leave college with an average student loan debt of $23,000.  In a recent online poll from <a href="http://www.collegegrad.com">CollegeGrad.com</a>, results show that 77% of 2008 college graduate job seekers reported that they planned to move back home with their parents after gradation.</p>
<p>By completing internships, culinary or otherwise, college graduates can leave college with a job in hand, or at least with a much clearer idea of exactly what kind of job they are looking for thanks to the real world experience and mentoring internships provide.  Steven Rothberg, Founder of <a href="http://www.thestreet.com/s/bring-out-the-best-in-your-interns/newsanalysis/small-business-tips-of-the-week/10431816.html?puc=googlen&amp;cm_ven=GOOGLEN&amp;cm_cat=FREE&amp;cm_ite=NA">CollegeRecruiter.com inthis article for TheStreet.com</a> advises employers to plan on hiring 74% of their interns on as full-time employees.</p>

<p>Chef David Gilbert recently released a <a href="http://www.chef2chef.net/article/planning-tasting-dinner.htm" target="_blank">new article</a> discussing how he came up with a tasting dinner to showcase some of the new dishes and concepts that he is cooking up for his new <a href="http://eatsblog.guidelive.com/archives/2008/07/ive-been-hearing-for-months.html" target="_blank">Rosewood Court restaurant in Dallas</a> due to open in January.</p>
<p>One of Chef Gilbert&#8217;s latest passions is sourcing food for his restaurant locally. <a href="http://eatsblog.guidelive.com/archives/2008/07/ive-been-hearing-for-months.html" target="_blank">Kim Pierce of EatsBlog</a> ran into Chef Gilbert at a Dallas farmer&#8217;s market a few weeks ago and did a fantastic write-up of their conversation and his innovative plans for bridging the gap between grower and restaurant.</p>
<p>There&#8217;s also advice on how to plan your own <a href="http://www.chef2chef.net/article/planning-tasting-dinner.htm" target="_blank">tasting dinner</a>, which is a great idea for an end-of-summer dinner party with friends.</p>

			<content:encoded><![CDATA[<p>Today&#8217;s <a href="http://blog.washingtonpost.com/parenting/2008/08/kids_meals_calories.html?hpid=topnews" title="Kids Meals Pack Big Caloric Punch" target="_blank">post</a> from The Washington Post&#8217;s <a href="http://blog.washingtonpost.com/parenting/" title="On Parenting">On Parenting</a> highlights a new study released by <a href="http://cspinet.org/new/pdf/kids_meal_report_final.pdf" title="Kids Meal Report" target="_blank">The  Center for Science in the Public Interest</a> taking an in depth look into the high-calorie, high-fat kids&#8217; meals being served at fast food joint and chain restaurants across the nation.</p>
<p>To give it to you straight, fast food is not good for your kids. In fact, some of these meals have more than a days worth of calories depending on the child. I would be willing to guess that most American parents want their children to eat well, but chain and fast food restaurants are making it difficult for parents to find a healthy meal for children let alone for themselves when eating out.</p>
<blockquote><p>Chili&#8217;s country-fried chicken crispers, cinnamon apples and chocolate milk, which have a whopping 1,020 calories. Chili&#8217;s cheese pizza, homestyle fries and lemonade aren&#8217;t far behind with 1,000 calories. KFC, one of five restaurants where all kids choices exceed the calorie limit, comes in third with popcorn chicken, baked beans, biscuit, fruit punch and Teddy Grahams for 940 calories. Burger King&#8217;s double cheeseburger, fries and chocolate milk have 900 calories. The other four restaurants where all kids meals don&#8217;t meet the health criteria are Sonic, Jack in the Box, Chick-fil-A and Taco Bell.</p>

<p>I don&#8217;t think parents should stop treating their children to a high-fat, high-calorie meal from time to time, but I do think it&#8217;s important to dine out in moderation. Like anything in life moderation is key in making the best decisions; especially when it comes to eating habits.</p>

			<content:encoded><![CDATA[<p>Grant Achatz, a survivor of life threatening tongue cancer, was named <a href="http://www.jbfawards.com/content/2008-nominees" title="2008 James Beard Foundation Award Winners" target="_blank">2008&#8217;s Outstanding Chef</a> award winner by the prestigious <a href="http://www.jamesbeard.org/" title="James Beard Foundation" target="_blank">James Beard Foundation</a> on  Sunday.</p>
<p>The award recognizes a working chef in America whose career has set national industry standards and who has served as an inspiration to other food professionals. Candidates must have been working as a chef for at least the past five years, according to the James Beard Foundation Web site.</p>
<p>In a <a href="http://news.yahoo.com/s/ap/20080609/ap_on_en_ot/james_beard_awards" title="AP Story: James Beard Foundation Awards" target="_blank">story</a> written by <span>AP Food Editor, </span><span>J.M. Hirsch, Achatz told the crowd of culinary cream of the crop:</span></p>
<p style="margin-left: 40px">He credits lessons learned when he was 22 and working at The French Laundry in Yountville, Calif., with teaching him not just how to cook, but also how to survive.</p>
<p style="margin-left: 40px">Those lessons were going to &#8220;make me a good cook and ultimately a great chef. What I didn&#8217;t know was that it was actually going to save my life,&#8221; he said.</p>
<p style="margin-left: 40px">&#8220;That drive, that tenacity, that dedication that I took in at that restaurant &#8230; it became a part of who I am 12 years later and helped me get through a pretty ridiculous battle (with tongue cancer).&#8221;</p>
<p>Achatz credits his successful fight against cancer and his ultimate success as a chef to his early culinary endeavors. It seems chefs have the opportunity to learn a lot about life from working in the kitchen.</p>
<p>A <a href="http://www.chef2chef.net/internship/submit_resume.php" title="Chef David Gilbert Internship" target="_blank">culinary internship</a> can instill future chefs with &#8220;that drive, that tenacity, that dedication,&#8221; that it takes to become successful as a professional and as a person.</p>

			<content:encoded><![CDATA[<p>So I came across this <a href="http://money.aol.com/fastco/general/canvas3/_a/weird-science-becoming-chef-homaro-cantu/20060508205009990001" title="Homaro Cantu" target="_blank">story</a> about <a href="http://en.wikipedia.org/wiki/Homaro_Cantu" title="Cantu on Wikipedia.org" target="_blank">Chef Homaro Cantu</a>, not knowing much about him, I found his story quite intriguing:</p>
<blockquote><p>Cantu was a troubled kid from the Pacific Northwest, with a mother who drifted in and out of homelessness. He narrowly avoided a trip to juvie for setting a huge fire in a field next to an apartment complex when he was 12.</p>
<p>As high school ended, Cantu found himself with no place to live. Fortunately, he connected with a couple named Bill and Jan Miller, who sometimes took in troubled teens. They offered him a couch in their living room on the condition that he go to culinary school. He did&#8211;and found his calling.</p></blockquote>
<p>Cantu went on to complete culinary school and was determined to be the best cook he could become. Being that <a href="http://www.chef2chef.net/internship/" title="On the Line">On the Line</a> is centered around <a href="http://www.chef2chef.net/internship/submit_resume.php" title="Application Page" target="_blank">Chef David Gilbert&#8217;s search for an intern</a> we though it would be important to share the experiences of yet another great chef who shaped his career with the help of numerous internships:</p>
<blockquote><p>He (Cantu) spent about two years traveling up and down the West Coast, knocking on the back doors of some 50 bistros, organic cafés, and fusion restaurants that he thought could teach him something and offering his services for free.</p>
<p>In February 1999, when Cantu was 22, he decided that Trotter, whom he idolized for his beautiful presentation and use of the best ingredients, would be his next stop. Arriving in Chicago armed with nothing but a stereo and a backpack, he went straight to Trotter&#8217;s and scored a meeting for the next day. Trotter told him it was rude to show up without an appointment. Cantu was unfazed. &#8220;Sometimes I just want to do things,&#8221; Cantu responded, &#8220;and right now I want to work at this restaurant, and that&#8217;s the only thing I want to do.&#8221; Trotter hired him, and Cantu spent the next four years climbing the ranks to sous chef. &#8220;It was a tough kitchen,&#8221; he says. &#8220;Some people call it hell. I call it a character-building experience.&#8221;</p></blockquote>
<p>Cantu has gone on to become an internationally acclaimed chef, a winner of Iron Chef, the executive chef of very successful restaurant (<a href="http://motorestaurant.com/" title="Moto Restaurant" target="_blank">Moto</a>), a leader in the field of molecular gastronomy, and the owner of his own business focused on taking the human dining experience to a new level, <a href="http://cantudesigns.com/index.html" title="Cantu Designs" target="_blank">Cantu Designs</a>.</p>
<p>Basically, what I&#8217;m getting at is an internship can open the door to a number of future endeavors. If you work hard, absorb as much information as possible, and persevere through difficult situations anything is possible. I&#8217;ll leave you with that (getting a little too fluffy with my optimism). Read the <a href="http://money.aol.com/fastco/general/canvas3/_a/weird-science-becoming-chef-homaro-cantu/20060508205009990001" title="Homaro Cantu" target="_blank">story</a> though, it&#8217;s quite aspiring.</p>

			<content:encoded><![CDATA[<p>An <a href="http://chef2chef.net/internship/pressroom/" title="Chef David Gilber Internship" target="_blank">internship</a> in the fine dining industry is an experience that can propel a blossoming chef into culinary stardom (well at least help get a foot in the door). Working with<a href="http://chef2chef.net/internship/pressroom/category/biography/" title="Chef David Gilbert Bio" target="_blank"> Chef David Gilbert</a> in promoting his internship has really got me thinking about personal passions and hobbies.</p>
<p>Chef David has a true passion for cooking and looks for that same burning desire in both his interns, and his staff. Being able to combine passion with work is an amazing opportunity; without passion life can be empty and mundane. He has emphasized throughout his search that potential interns should be well rounded and have hobbies other than cooking.</p>
<p>Not too long ago I came across another chef who combines his passion for cooking with his passion for music. <a href="http://djchef.com/home.html" title="DJ CHEF Home" target="_blank">DJ CHEF</a>, a.k.a. Marc Weiss, has been &#8220;spinnin&#8217; the beats while cookin&#8217; the treats&#8221; for some time now. He is a culinary school graduate and began his career training with top chefs <a href="http://www.bobbyflay.com/" title="BobbyFlay.com" target="_blank">Bobby Flay</a> and Matthew Kenney in fine dining restaurants in New York City. Weiss runs <a href="http://djchef.com/home.html" title="DJ CHEF Home" target="_blank">DJ CHEF Events and Entertainment</a> and caters many major events in the New York area.</p>

The lucky aspiring brewmeister will get to work with <a href="http://www.starwoodhotels.com/promotions/promo_landing.html?category=FP_BEER&amp;EM=VTY_FP_cbo_promotion">Chief Beer Officer, Scott Kerkmans</a>.  Not a bad title, huh?  Many a young man (and woman) has lain in bed after a night of pizza eating and beer guzzling, dreaming of such a chance. In fact, CBO Scott Kerkman looks like he just graduated from college himself.</p>

			<content:encoded><![CDATA[<p>So, remember how the Chef David Gilbert Internship was scheduled to start late summer 2008? Okay, scratch that!  Chef Gilbert still wants to hire an intern, it&#8217;s just that the job&#8217;s start date has been delayed a bit.  Things change fast in the restaurant world.  What can we say?  The new Grand Opening date of Chef Gilbert&#8217;s restaurant in Dallas has been moved to  January 2009 and the new deadline to apply is <strong>October 31st, 2008</strong>.</p>
<p>The best things in life are worth the wait, believe me, and an internship with Chef Gilbert will be a life-changing experience for whoever he selects.
