Texas Red Grapefruit

Texas Red Grapefruit are sweet, juicy and tree-ripened, literally stored on the tree to peak of perfection. Texas produces the following trademarked categories of grapefruit:

Rio Star® Category:

Combines the two reddest varieties - Rio Red and Star Ruby grapefruit. It has an overall blush on the exterior peel with a deep red interior color which is 7 to 10 times redder than the Ruby Red.

Ruby-Sweet® Category:

Includes the famous Ruby Red, and other redder varieties - Henderson and Ray. Its smooth, yellow skin is naturally tinged with a reddish blush, and an interior color 3 to 5 times redder than Ruby Red.

Flame Category:

Red but not too red, with the sweet, delectable taste as the Ruby-Sweet and Rio Star. Available at certain times from October through May.

All varieties are available in grocery stores from October to May.

Spicy Grapefruit Salad

Makes 8 servings

Ingredients:

3/4 pound fresh spinach
1/2 medium jicama, peeled and cut into thin strips
1/2 red onion, thinly sliced
3 Texas Rio Star grapefruit, sectioned

Preparation:

Mix all ingredients in salad bowl and chill. Toss with spicy citrus salad dressing.


Spicy Citrus Salad Dressing

Ingredients:

2 teaspoons toasted poppy seeds
6 cloves garlic - chopped
3 tablespoons grapefruit juice
2 tablespoons white-wine vinegar
2 tablespoons olive oil
1 tablespoon coarse-grain mustard

Preparation:

In a blender, combine all ingredients except poppy seeds, until creamy. Season with salt and pepper. Drizzle dressing over salad mixture and toss. Top salad with poppy seeds.

Lycopene Nutrient Found Naturally in Texas Red Grapefruit

Texas red grapefruit contains several phytochemicals, including lycopene, beta-carotene, limonoid glucosides, naringin and vitamin-C. The Texas A&M University-Kingsville (TAMUK) Citrus Center scientist, Dr. Bhimu Patil, says the levels of these five phytochemicals are higher in the Rio Red Grapefruit, grown in South Texas, than other pink and white varieties grown elsewhere. Among different grapefruit varieties, Rio Red is gaining consumer acceptance because of its deep red color, sweet flavor, texture and quality of the fruit.

Roast Chicken with Caramelized Grapefruit

Makes 4 servings

Ingredients:

3 to 3 1/2 pounds bone-in chicken breasts (4 pieces)
1/4 cup oil
2 large sweet onions cut into 1-inch pieces
2 Texas Rio Star grapefruit, sectioned
1 cup white wine
1/2 cup brown sugar
1/3 cup grapefruit juice, reserved from sectioning
1/4 cup chopped fresh parsley
6 minced garlic cloves

Preparation:

In large skillet, heat oil. Sprinkle chicken with salt and pepper. Cook chicken on medium-high heat skin side down, about 4 minutes or until browned.

Place chicken in shallow roasting pan. Add onions and grapefruit. Combine wine, brown sugar, grapefruit juice, parsley and garlic. Pour over chicken. Bake 30 minutes or until chicken is fully cooked.
