THE PURE AND SIMPLE SIDE OF SPRING
Color-popping vegetables overwhelm you as you walk into your supermarket or farmers market. You want to grab that freshness and take it home, but which ones do you choose first and THEN what do you do with them?
Our Springtime Rice recipe is a great introduction to the season, and the wonderful produce Spring has to offer!
Springtime Rice
1/4 cup olive oil
1 clove garlic, minced
1 bunch asparagus spears, cut into 1-inch pieces (3 cups)
2 portobello mushrooms, cut into strips
1 red bell pepper, chopped
3 cups cooked rice
1/2 cup grated Asiago cheese
1/2 teaspoon salt (optional)
Heat oil in large skillet over medium heat until hot. Add garlic, asparagus, mushrooms and pepper; cook about 10 minutes, stirring frequently, or until tender. Add rice, cheese and salt. Stir until well blended; heat thoroughly.
This delicious rice dish not only pops with color from its brilliant green asparagus, flashy red peppers and earthy portobellos, but when they sizzle in the skillet, the pure, natural flavors come to life! The nuttiness, sweetness and earthiness of the vegetables are a perfect balance with the gentle tang of the cheese and the tender, flavor-absorbing rice.
