The
Institute of Culinary Education (ICE) offers highly
regarded, accredited 6- to 11-month career training programs in culinary arts,
pastry and baking arts and culinary management. With a gender ratio of
approximately 50/50, ICE students come from all over the United States and the
world. Class sizes average 12 students in the culinary arts and pastry and
baking programs, and 17 students in culinary management. Convenient schedules
allow students to take morning, afternoon, evening, or weekend classes
depending on their needs. Externships and job placement, frequently in New
York City's finest restaurants, are an integral part of the school's program.

Thai Flavoured Chicken Burger
"Chicken burgers – Thai style! These are packed
with a myriad of flavours reminiscent of Thailand. The Thai might enjoy
something like this in the form of a kebab or skewer on sugar cane, but since
hamburgers are about my favourite food in the world, why not play around?" -

Makes 4 servings
Ingredients:
1 pound ground chicken
2 1/2 tablespoons lime zest
1 tablespoon lime juice
1 teaspoon fresh chili, minced
3 cloves garlic, minced
1/8 teaspoon sesame oil
1 egg
2 tablespoons coriander, chopped
1 shallot, minced
1/2 teaspoon soy sauce
2 teaspoons ginger, minced
1 teaspoon scallion, sliced
3/4 cup panko bread crumbs
1 teaspoon fish sauce
4 buns, toasted
lettuce
tomato
Pineapple Ketchup (recipe follows)
Preparation:
To make burgers: combine all ingredient in a large bowl until well combined.
Add more or less panko breadcrumbs as needed to make the mix pliable and soft,
but not falling apart.
Shape into 4 patties and refrigerate for 1 hour to let the flavours meld and
the burgers keep their shape.
Grill on preheated grill until the internal temperature hits 180°F.
Serve on buns with lettuce, tomato and pineapple ketchup.

Taco Burgers with Chipotle Mayonnaise
Ingredients:
1 pound lean ground beef
1/2 cup of your favorite salsa
1 large egg (omit if serving burgers rare or medium rare)
1/2 package (1.25-ounce) taco seasoning mix
1/3 cup mayonnaise
1 chipotle chile in canned adobo sauce
4 hamburger buns, warmed
garnishes to include sliced tomato, fresh chopped cilantro, chopped red
onion and pepper jack cheese
Preparation:
Combine the beef, 1/2 cup salsa, egg if using and the 1/2 packet taco
seasoning mix in large bowl. Shape into 4 even burgers. Place the mayonnaise
and chipotle chile in blender. Cover and blend until nice and smooth.
Grill or broil burgers, turning once, to desired doneness. Serve on buns
topped with chipotle chile mayonnaise and appropriate toppings. Serve with
your favorite corn tortilla chips.
